Ingredients for Coconut Roast Chicken Recipe

Chicken on Bone cut into 8-10 pieces on the bone 750 grams

Coconut chopped 1/4 cup

Ginger-garlic-green chilli paste 1 tablespoon

Red chilli powder 1 teaspoon

Crushed black peppercorns

Coriander powder 1 tablespoon

Fennel powder 1 teaspoon

Salt to taste

Ghee 2 tablespoons

Curry leaves 18-20

Onion sliced 2 medium

Tomato puree 1 cup
Procedure:
Step 1
Take a saute pan, put Ghee, and then add coconut chopped. Keep Stirring it till coconut turns golden brown in color. After that add curry leaves and onion sliced. Once onions turns translucent, add ginger garlic and chilli paste into it.
Step 2
Once the smell of ginger-garlic goes and oil starts to float, add tomato puree. Mix it well, till oil separates. Then add all the masala’s into it. Mix them well.
Step 3
Put the chicken pieces into this mixture, add salt and mix well. Cover and cook on medium heat till the chicken is fully done.
